The Simple Creamy Dreamy Chia Pudding is a great recipe for breakfast or as a snack. Has a great nutritional profile with all the macros needed for a good balanced diet. We highly recommend it for everybody and particularly if you have joined the Spring Renewal Challenge.
INGREDIENTS:
- 2 Table Spoons Black Chia Seeds
- ½ cup Unsweetened Coconut Milk (or Almond Milk or any preferred milk)
- ½ teaspoon honey
- 1 Levelled Teaspoon – Single origin Vietnamese cacao powder (is what I have used for today’s pudding but can use any cacao you like)
- 1 Levelled Teaspoon – Vanilla Protein Powder (your preferred). I have been using Botanika Blends ; love it for the pre and probiotics, digestive enzymes content and is plant based, all natural AND Australian. Ticks all my boxes!
For flavour:
- a dash of liquor
- Cinnamon, Chilli Powder, Orange or Lemon Zest (we zest our oranges in winter and layer in a jar with vanilla sugar; is lasting all year for different recipes, but can also use the zest from my lemon tree as obviously are wax free).
For garnish (and extra flavour and texture): chopped roasted almonds mint & kiwi fruit.
NOTE : All ingredients measured for a complete snack serving, 2 tablespoons of chia seeds for 1/2 cup of coconut milk.
Method
- Mix the chia seed + milk. I recommend mixing very well until all the chia seeds are incorporated properly into the milk.
- Add & mix well the cacao and the protein powder
- Wait a few minutes for the chia pudding to settle and mix again. This will ensure it doesn’t separate in the fridge.
- Add honey and flavours and mix well to make sure there are no clumps and don’t refrigerate it until it’s clump-free.
- Leave over-night, garnish and enjoy in the morning as breakfast or a snack (can put it in jar and take it with you at work or wherever you are).
