Smashed Avo & Feta

Ingredients: 2 x portions

  • 1 avocado halved, stoned and roughly smashed with a fork
  • 2 capsicums halved and cleaned
  • 4 radishes sliced
  • 100 grams feta
  • chopped basil, lemon juice & pepper

Method:

  1. Combine avocado, lemon juice, basil and pepper in a small bowl.
  2. Crumble feta in the bowl and toss lightly.
  3. Divide avocado mixture on each half capsicum and top with the sliced radishes.

The Perfect Omellete

Ingredients: 1 x portion

  • 2 Eggs; 1 tbsp Butter; 1 tbsp Cream; Salt, pepper, parsley to taste; 1 tomato and 1 cucumber

Method:

  1. Combine eggs, yolk, cream, salt, pepper into a bowl and mix until frothy.
  2. Add parsley and let the mixture sit for couple minutes.
  3. Add butter to a small non-stick skillet and turn on to low heat.
  4. Using a spatula continuously stir the egg mixture scrapping it off the bottom and the sides.
  5. Once the eggs have firmed enough, starting from one end, use the spatula to slowly roll the eggs into an omelette.
  6. Cover the pan with a lid, switch of the heat and allow to sit for 1-2 minutes.
  7. Push out onto a plate next to your fresh vegetables and enjoy!

Choco Chia Smoothie

Ingredients

  • 1 cup almond milk (no added sugar)
  • 2 tablespoon chia seeds
  • 1/2 cup toasted /chopped almonds
  • 1 tsp cocoa powder
  • 1 celery stick
  • 1 tsp coconut flakes
  • 1 tsp cocoa nibs & sunflower seeds

Instructions

  1. Put the chia seeds and almond milk in your blender and let them sit for 30 minutes without blending.
  2. Add the toasted almonds (reserve a few if you would like some for garnish), the cocoa powder and the celery stick. Blend on high for 30 seconds
  3. Top up with coconut flakes, almonds, sunflower seeds and cocoa nibs.
